어릴적 배고픈 시절에 엄니가 해주신 최고의 간식 ....

어릴적 엄니가 해주신 간식이 생각이나는 계절입니다.

 

 

 추운겨울 밖에서 뛰어놀고 싶은디 매서운 칼바람이 심술을 부리니

 나가지도 못하고 솜이불 속에서 묵을것만 궁리를 하는 시간이면

 어김없이 해주시던 엄니의 술빵....

 

 

 지금이야 베이킹 파우더. 이스트란 재료들이 풍부하지만 그때는

 밀가루를 부풀리기 위해서 사용한것이 막걸리 였던가 같아요.

 

 

 구수한 막걸리 냄새에 왜그리도 맛나던지 어릴적 묵었던 술빵을

 재현을 할려고 하는디 그때 엄니가 해주신 그맛이 날런지......

 

 

 

 

 

 

                                                                                                                                            이른아침 배가 고프실땐데 한조각 드시고.....ㅋㅋ

                                                                                                                                           참 모닝 커피를 준비를 못해서 지송 하구만유....ㅎㅎ

                                                                                                                                                       우선 재료를 먼저 소개 할거구만유.

                                                                                                                                   빵도 심심하면 맛이 없으니 간을 해야하니 소금이 필요하지요.

                                                                                                                                                 술빵에 포인트인 막걸리가 필요합니다.

                                                                                                                         꽁지는 마트에서 사온 막걸리가 요것인디 아무거나 상관은 없어유.

                                                                                                                                                             눈같이 흰 요것은 설탕이구유

                                                                                                                                 어릴적에는 설탕이 귀해서 엄니몰래 퍼묵다 많이두 맞았지유.....ㅎㅎ

                                                                                                           특별한 날에나 묵었던 닭알 그때는 넘 집에갈때 계란한줄 사가면 최고의 선물이였는데........ㅋ

                                                                                                                                                                     요건 밀가루 이구만유.

                                                                                                               그때는 왜 그리도 밀가루로 한 음식을 많이도 묵었는지 지금 생각해보면 그것이다 돈 따문인거 같구만유.

                                                                                                                                       준비한 재료를 꽁지는 바가지에 넣어서 반죽을 합니다.

                                                                                                                          애구 불쌍한 울꽁지 증말로 없어 보인다 궁상을 떨어요..........ㅋㅋㅋㅋ

                                                                                                                                                      이제 완성된 반죽을 숙성을 시켜야 겠지유.

                                                                                                                                               일단~은 반죽을 뚜껑이 있는 그릇에 담으셔유.

 

                                                                                                                                                글구 말이쥬 뚜껑을 덮어 주셔야 하는구만유.

                                                                                                                                                      뚜껑을 덮으라구유 빨랑빨랑 덮지안하고 뭐한다요.

 

                                                                                                             그다음은유 어릴적에는 솜이불을 덮어서 아랬목에 두었는디유 꽁지는 엄니에게 솜이블을 가지러 가기가 귀찬아서

                                                                                                                                                      꽁지는 집에있는 아시아나 기내담요로 그냥 덮을 거구만유.

                                                                                                                                  어제밤에 맹근 반죽을 오늘 아침까정 따뜻한 방에서 숙성을 했지라.

                                                                                                                                       그리 해부렀더니 요로콤 반죽이 뽀글뽀글 부풀어 올라 왔구만유.

                                                                                                                                     눈이침침한 분들을 위해서 꽁지가 요로콤 들리댑니다 고맙지유....ㅎㅎ

 

                                                                                                                                              이제는 보이시남유 뽀글뽀글 반죽이 부풀은 모습이 ...

                                                                                                                                                그리해도 안보이면 지도 어찌할수가 없구만유.

                                                                                                                             잘부풀어 오른 반죽을  쪄야 하는디 꽁지네는 찜통을 이용을 할거구만유.

                                                                                                                      보자기를 만두해묵는다고 김치를 짜다가 전부찟어 묵어서 없으니 우야믄 조태요.

 

                                                                                                                         그래서 아쉬운대로 주방에서 사용하는 키친타올을  쓰기로 했구만유....ㅎㅎㅎ

                                                                                                                                                          그 위에다 반죽을 부워주셔유.

 

                                                                                                                힘들구 답답하시지유 그면유 쪼매만 기둘르셔유 바로 가스렌지에 올려서 불을켜지 마시고

                                                                                                                          30분만 기둘르셔야해유 그래야 맛난빵을 묵으니 야그를 들으셔야 할거구만유.

 

                                                                                                                                    시간이 다된거 같은디 불을키셔유 센불말구유 중불에 하셔야해유.

                                                                                                                                                   참 꽁지는 건포도를 위에서 언졌구만유.

                                                                                                                                         겁나게 부풀어오른 술빵을보니 갑자기 엄니가 보구 잡은디요.  

                                                                                                                               다음에는 엄니 집에서 맹글어 드려야 겠시유 그리하면 엄니가 감동을 하시것지유

                                                                                                                                          ★ 요거 참고하시고 맛나게 맹글어 드시길...............★

 

                                                                                                                ☞요리재료 : 밀가루 400g. 설탕 100g. 계란 3개. 막걸리 400ml. 소금약간.

 

 

                                                                                                               ☞요리방법

                                                                                                                                           1. 먼저 막걸이. 설탕 . 계란. 소금을 넣고 잘져어 주셔요.

 

                                                                                                                                            2. 잘저은 (1번에) 밀가루를넣고 반죽을 하셔요..

 

                                                                                                                                            3. 반죽을한 (2번을) 뚜껑을 덮고 보온이 될수있는 것으로 덮어 주시고

                                                                                                                                                   (엄니는 반죽을 하셔서 따뜻한 아랬목에 솜이불을 덮어서 두셨던 기역이)

 

                                                                                                                                            4. 보온을 한 (3번을) 밤사이 부풀어 오르도록 하룻밤을 재워주셔요.

                                                                                                                                                  (열을 가하여 발효가 가능하지만 옛방식으로)

 

                                                                                                                                            5. 아침에 부푼 반죽을 다시한번 손질을해서 찜용기에 담으시고

 

                                                                                                                                           6. 용기에담은 반죽을 한시간정도 그상태로 두면 다시 발효가 됩니다.

                                                                                                                                                   (5번 상태에서 쪄도 되지만 빵이 질길수도있읍니다.)

 

                                                                                                                                           7. 발효된 반죽을  약불에서 찌면 맛난 술빵이 완성됩니다.
